About This Knife
This compact 100mm funayuki is forged from Shirogami (White Steel), one of Japan’s most beloved carbon steels. Known for its extremely pure composition, Shirogami takes an incredibly sharp edge and responds beautifully to whetstone sharpening.
The funayuki style originated as a small multipurpose knife used by fishermen, designed to handle everything from trimming fish to general prep work on a small cutting board. In the kitchen, it functions as a nimble utility knife, perfect for small vegetables, herbs, citrus, garlic, and detailed prep tasks.
At just 65 grams, the knife feels light and quick in hand, making it ideal for precise work where control matters. The traditional wa-handle keeps the knife balanced toward the blade and gives it that classic Japanese workshop feel.
This is the kind of knife that quietly becomes a favourite once it finds its way into daily prep.
Care
As a high carbon Shirogami blade, this knife will develop a natural patina over time.
Wipe dry during use and avoid leaving it wet to keep the edge in excellent condition.
