This traditional Japanese deba is a solid, no-nonsense workhorse—ideal for processing whole fish or poultry with control and power. Lightly restored and freshly sharpened, it's ready for a second life in a working kitchen or curated collection.
The blade is a single bevel for right-hand use, sharpened progressively on 1000 and 3000 grit whetstones, and finished on a leather strop for a clean, confident edge. While the exact steel type is unconfirmed, it is high-carbon—likely Shirogami (White #2) based on performance and feel.
The original magnolia wood handle has been gently polished and sealed with beeswax and orange oil to nourish and protect the wood while maintaining a natural grip. This is a tool that rewards care and attention.
