About This Knife
This 170mm santoku is a classic example of a traditional Japanese workshop knife built for everyday kitchen work.
Forged from high carbon steel, it takes a very keen edge and sharpens easily, making it a favourite among cooks who enjoy maintaining their blades on whetstones. Over time the steel will develop a natural patina, giving the knife character as it’s used.
At 112g, the knife is light and agile, making it comfortable for long prep sessions. The santoku profile excels at slicing vegetables, trimming proteins, and general kitchen work.
The wa-style handle keeps the balance forward toward the blade, giving the knife a responsive feel on the board while maintaining excellent control.
This is the kind of knife that doesn’t rely on flash or branding. It simply does its job well.
