This gyuto comes from Sakai Takayuki (堺孝行), one of the best-known knife makers out of Sakai, Japan’s historic blacksmithing hub. Stamped V金10号 (VG-10 steel), the blade features a stainless core prized for its fine grain structure, strong edge retention, and balance between sharpness and durability.

 

The 割込 (Warikomi) mark indicates San Mai construction — a hard VG-10 core steel clad in softer stainless for toughness and ease of maintenance.
