Description
A remarkable piece of Japanese knife-making heritage from Teruyasu Fujiwara, one of Japan's most respected traditional blacksmiths.
The Fujiwara family traces its forging history back to 1870, with four generations preserving the techniques of Japanese sword-making. Today, Teruyasu Fujiwara continues this legacy in Tokyo, producing highly sought-after kitchen knives celebrated for their exceptional heat treatment, cutting performance, and distinctive handcrafted character.
Believed to be from Fujiwara's renowned Maboroshi series, this gyuto features a hand-hammered blade with a beautifully rustic finish. The Maboroshi line is forged using premium Shirogami #1 carbon steel, hardened to approximately 64–65 HRC and protected by stainless steel cladding, delivering exceptional sharpness and edge retention.
Its 200mm blade provides excellent versatility for professional kitchen work, while the traditional Western-style handle offers familiar comfort and control.
A highly collectible Japanese chef's knife from a historic four-generation blacksmithing family. Comparable Maboroshi gyutos retail for approximately $658 CAD new, with availability often limited due to demand for Fujiwara's handcrafted work.
