Craftsmanship
The kanji on the blade reads 本鋼 義弘作 (Honkō Yoshihiro Saku) — meaning “True Steel, Made by Yoshihiro.” The mark of a blade built the old-fashioned way, using genuine Japanese carbon steel.
Each knife is hand-forged (手づくり) by craftspeople following techniques that trace back centuries to the samurai swordsmiths of Seki. The carbon steel takes an exceptionally fine edge, gliding through product with that telltale whisper-cut only true carbon can give. Over time, it’ll develop a deep blue-grey patina — a sign of honest use and proper care.
Why It Stands Out
This is the kind of gyuto that embodies traditional Japanese knife-making — minimal, sharp, and purposeful. The steel feels crisp on the stones, rewards good technique, and tells its story through the patina it builds. Balanced at 150g, it’s light in the hand but steady on the board, with just enough flex to feel alive in motion.
Care
As with all carbon steel, it’s not stainless — wash and dry immediately after use, and store dry. Let it build its patina naturally; that surface coloration is the knife’s own protection and character. A light coat of oil between uses keeps it pristine.
