This blade carries the kanji 兼常 (Kanetsune), a respected name from Seki, Japan, one of the historic centers of Japanese blade-making.

The yanagiba is the traditional knife used for slicing sashimi and sushi. Long, thin, and single-beveled, it’s designed to make one clean pulling cut that preserves the texture of delicate fish.
