Forged by Takeo Murata, a veteran blacksmith from Kochi, this 210 mm Gyuto captures the essence of hand-crafted Japanese performance. The core steel is Aogami Super, Hitachi’s highest-grade Blue Paper Steel — ultra-fine grained, rich in tungsten and vanadium, and capable of incredible hardness without brittleness.

Murata’s iconic kurouchi finish is intentionally rustic, preserving the forge scale for extra oxidation resistance and an unmistakable handmade aesthetic. Your restoration respected that tradition — cleaning, tuning, and re-sharpening while leaving the blade’s honest working character intact.
